Is it bad to have 2 in the front, three in the back, or is three in front better?

Both formations are fine.

In EO1 my front line is Landsknecht and a Protector and that works perfectly fine.

The main things to consider is that the front row gets hit more often than the back row and that melee weapons won't do as much damage in the back row so you want the back row to use Bows/Magic.

Cool. I have a Landsknecht and a Protector in front and an Alchemist, Medic and Troubadour at the back.
