Harvesting is one of the easier ways to get money.

The only thing you would want to keep mob drops for are quests from the tavern. If you don’t mind mechanic spoilers you can look up all the quests online and see any items you may need to keep. However, some quests that require items specifically require you to sell items to the shop.
There is no crafting so no need to worry if you’re going to be missing out on something.
