Report a translation problem
If you inspect each ingredient in the ingredients tab at the restaurant, you will see which fish are used in later recipes.
You may want to save them to increase the later recipes as you unlock them, those are actually worth money.
Even the best fish at level 10 isn't valuable enough on its own to be worth upgrading at all. You want to upgrade the special dishes that make multiple servings.

I have maxed most single seafood sushi but only 6-7 special recipes. I can't get some of the more expensive dishes because the ingredients are a major grind / drag (e.g., Southern Bull Kelp, Black Coral). They really need to up how much seafood you can get and make it faster to get the seaweed farm. . .
