What is the best staff

personally i have:
Serving
Raptor - Serve cocktails and fill wasabi.
El Nino- - Serve tea/beer perfectly, clean dirty plates fast

Cooking:
James - Cooking+ and 10% chance to get a free extra plate of sushi
Yone - Cooking+ and 5% chance to get a free extra

Dispatch:
Davina - top 6 dispatch stat + dispatch master
Masayoshi - top 6 dispatch stat + dispatch master
Yasuke - top 6 dispatch stat
Yui - top 6 dispatch stat
Pai - top 6 dispatch stat
Carolina - top 6 dispatch stat

maki is also good for cooking, since she has the highest cooking stat and is given to you by the game for free

Raul is ok for cooking, his stat is low but he buffs the prices of drinks and has the 10% free plate like james

Itsuki is good for serving, she serves tea and beer, but not perfect, but has the highest charisma so she generates more tips and cooksta likes. plus shes very cheap to hire.

those 6 are the top 6 dispatch stats, but there's only 2 characters with a dispatch boosting skill.

Hire everyone. Whoever you don't need to run your place = dispatch for seasoning.

Their cost at level 1 is minimal (12-60 gold depending on who) but the seasoning brought it easily allows more overall profit, and you will need 221 seasoning per good recipe to max it out.

If you consult the steam guides you will find all staff with their respective stats. After that you can decide which ones best suit your needs. Overall though you want to hire everyone so the ones that don't work at the bar or the branch are being dispatched for contiments.

Imo most important skills are drinks/cocktail serving and table cleaning.
Wasabi refill is fine but its not a big deal if you have to do it.

Despite the aforementioned Steam guide (which is very high quality + informative) arguing to the contrary, this guy makes a surprising case for Raul as cook:

Basically, the idea is that the cooking staff doesn't matter that much in this game, i.e. you don't need high-leveled cooks with the best stats to hit 5/5 Artisan Flames every night, so you may as well use Raul for his Drink Master/Ingredient Prep Master skills. Following his lead, I am trying out:

Restaurant: Maki(+Bancho) cooking, El Nino+Cohh serving

Branch: Charlie+Raul cooking, Drae+Kyoko+Billy serving
(I need to test this theory, but I'm suspicious that Drae as Branch Mgr leads to higher profits, but Kyoko as Branch Mgr leads to more consistent 5/5 Artisan Flames...)


Of course, it really doesn't make a big difference. The game doesn't "need" to be min/maxed; I'm just entertaining the idea as I re-play for the DLC. There are tons of viable combinations, so just use your favorites.
