The characteristics of the staff - "Procure" and "Appeal" what is ?
Hello;
when you display the characteristics of the staff, there are the four indications below, but I think the French translation is not good for the last two...
Can you please explain?

Cooking - Cuisinier (French)
Serving - Service en salle (French)
Procure - ???
Appeal - ???

If your Staff is not working in the Sushi Bar you can dispatch them from the waiting Room to obtain seasoning. "Procure" determines the amount of seasoning that can be obtained. "Appeal" is also used for that and additional to determine if the worker gets a tip (and the high of the tip) if he serves in the sushi bar.

Procure = how much stuff they bring back from dispatch.
Appeal = one of the stats for manager popularity. also increases chance to randomly get extra random seasoning.

Bonne soiree (apologies for the lack of accent).

''Procure'' means the level of successful ingredient collection. Not wasabi, the red cooking pot ingredients you find on your dives; like salt, soy sauce, etc. You send all extra staff to the Waiting Room tab, then click on their drop down menu, from there you can click ''dispatch'' to send them to collect whatever ingredient you may need. The next time you serve sushi the following night, they will be back with the ingredients. You have to pay them every day, so they may as well be useful (it isn't extra, they get their wages regardless of whether they just sit in the waiting room, or help out).

''Appeal'' is the level of popularity. It would probably affect how MANY ingredients they collect (there is usually a number, like 1-3). I would think that it affects the number of tips they collect, whether or not they get ''likes'' from customers, maybe even how long a customer would wait before stomping off. I could be wrong; the context to me is simply POPULARITY. And dubesor said it helps with branch management, but I haven't gotten that far, yet.

Seasoning as in Miso , Soy Sauce , Salt etc.
You can "Dispatch"(Send them on a Errand) Employees to get Seasoning

Can't say much about Appeal , but i would guess that they get better Tips and the Chance to get extra stuff on Dispatch.

Last question, after training a staff member, does his salary change?

yes, when you level up staff their pay increases by half their starting salary per level (7-30 per level). However they become better and it's important to get them to at least level 7 for 2 skills. for more see here, there is a training section and a salary section:
