Appeal = one of the stats for manager popularity. also increases chance to randomly get extra random seasoning.
When you talk about seasoning you mean that the staff in the waiting room replenishes the Wasabi during service?

''Procure'' means the level of successful ingredient collection. Not wasabi, the red cooking pot ingredients you find on your dives; like salt, soy sauce, etc. You send all extra staff to the Waiting Room tab, then click on their drop down menu, from there you can click ''dispatch'' to send them to collect whatever ingredient you may need. The next time you serve sushi the following night, they will be back with the ingredients. You have to pay them every day, so they may as well be useful (it isn't extra, they get their wages regardless of whether they just sit in the waiting room, or help out).
''Appeal'' is the level of popularity. It would probably affect how MANY ingredients they collect (there is usually a number, like 1-3). I would think that it affects the number of tips they collect, whether or not they get ''likes'' from customers, maybe even how long a customer would wait before stomping off. I could be wrong; the context to me is simply POPULARITY. And dubesor said it helps with branch management, but I haven't gotten that far, yet.

You can "Dispatch"(Send them on a Errand) Employees to get Seasoning
Can't say much about Appeal , but i would guess that they get better Tips and the Chance to get extra stuff on Dispatch.
