Keep an eye out on how many servings are provided for each item. Some you only need to add 1 to the menu as it will provide e.g. 5 servings.
TIP: Hunt the Sailfish (found it easier to locate than others and farm as well) when you find it, max the level on the dish and you will never be broke :D
Few more hours and I am done with this game, it has been a fun title to forget the real world for a while.

It also depends on how fast your staff are - if they're too slow, they won't be able to serve the max number of customers you can have in one night. That can give the appearance of variability. On event nights, the max number stays the same.
You can check the number of thumbs up in the end of night summary for the number of customers you successfully served. For it to be fully accurate, of course, you need to not have a customer leave angry.
- customers will prefer to order high taste food
- if you fish at night you get 2/3 customers, So like gold is 29, if you fish at night you get about 20 customers.
What I'm doing now is getting close to the number of customers with great dishes, and for the last ones I put just one mediocre dish (lesser than others "taste") in auto supply
