Best Use for Time Skip?

In wich situations do you use time skip? When you have plenty of fish and dishes and you just want to stay at the sushi bar griding gold? Or when you want to skip sushi and just keep fishing? Is that the main use of this feature?

If you are speedrunning and just want to progress to the next day to unlock the next story part as fast as possible.

I'm trying to max out my dishes and make gold, but I have plenty of fish. So I skip a lot of time just waiting for the vegetables to grow, seaweed to grow, and getting dispatch ingredients. I really feel like the farms need much larger expansions.
