Protip: You can serve whatever you want, as this game is about fun and not really about maximizing efficiency or money.
Games design doesn't work like that, because most people will do whatever is best. It's why people create optimised farming for every game imaginable.

This is the menu at level 10 (All dishes) whilst being organised by price. Some things to observe:
- Tropical Fish Sushi Set is by far the most powerful, for the ingredients listed it will make 1387*9 coins (12483 coins per 9 fish and 3 rice). Truly an insane price point, it might even get nerfed full release.
- The next 3 highest dishes all involve Rice, which conflicts with saving rice for the Tropical Fish Sushi.
- The 5th highest dish is actually the Jellyfish and Sea Grape sushi made from the Stalactite caves. However Sea Grapes can also be used in one of the 2nd most expensive rice dish. This dish only serves 1 person however unlike the dishes above it, however doesn't take rice so it's a viable option to run along side.
- The 6th is Megamouth shark sushi, the 9th and 12th place dishes are also Sharks as they are the Frilled Shark and Cookiecutter Shark respectively. The 8th is Rhinochimaeridae which I initially didn't think was a shark, however is in the same Class (Chondrichthyes), That said Stingrays such as The Marbled Electric Ray are part of this class too. Megamouth sharks are part of a different order than both Copper and tiger sharks, and all of those are a different order from Frilled Sharks. Turns out shark can be a very broad term if we go by class. And going by order wouldn't make sense as there are several things called "sharks" in different orders.
- The 7th dish is one of the only 2 puffer fish dishes. The other one being the 3rd Highest, requiring rice. This dish only requires Pufferfish and Agar making it suitable to run along side rice dishes.
- The 10th and 11th best dishes are a dish made with a fish and kelp, and a Moray Eel curry.
That said I get the point, sharks are good, you can see a bit lower down on the menu, Copper Shark, Blacktip Reef Shark, Whole Roast Shark Head, and, Tiger Shark sushis are among the top 28 you can see here. As seen around the mid section of this image a lot of the fish you can catch at the current deepest area and the Night only catches are also of fair value.
As you can tell by the image, I have definitely stocked up on sharks, however a fair amount of that comes from my fish farm.
In short there are definitely things worth hunting outside of sharks, namely:
- Titan Triggerfish, Harlequin Hind, and, Coral Trout
- White Spotted Jellyfish, and, Seagrapes
- Pufferfish, and, Agar
- White Trevally, and, Kelp
- Moray Eels (Fish farm them)
- Make sure to send out employees for mostly Soy Sauce, but some Turmeric.
- Farm rice, I might make a video showcasing how to guarantee high yields of rice.
EDIT: The whole game has changed

I'm not doing a write up, however a bunch of the dishes I listed as good got even better, As such pufferfish are extremely good now. And the actual meals have climbed up the menu where sharks seem to have dropped back a bit.
I also researched the boss dishes. As you can now cook bosses I guess.
