As for more customers and money, two things will primarily help: 1) Sell only the pricey recipes. Customers will buy what you have available, so I take a more manual approach with my menu. 2) Level up your staff. The higher their level, the faster they will be able to handle what's going on. Also, don't be afraid to swap out one staff member for another with better stats. I usually do that after I level them a few times.
The key to any of the farms is that, once you transfer to the kitchen or sell fish, you must be below 100% density (even 99% is fine) in order to get full growth the next day. So use that space by keeping more fish to increase reproduction when you have the space. In the end, just do what you are comfortable with. The 2 main rules are, 2 or more fish of the same type (either 2 or 3 star) and less than 100% density in that farm. Both of these basic rules the game tells you.
