What dishes get the highest taste rating?

A higher taste rating is all I need, what dishes / fish do I focus on?

Shark sushi heavily enhanced is the normal choice.

Early on the Sawnose Shark shushi enhanced a bunch or Megamouth.

Later on something like Narwhal sushi.

Shark is pretty easy to max out and will get you the diamond rating, otherwise just focus on your best seller. I used Michael Bangs dish as my premier one.

i have upgraded soup to max its like 800$ from each costumer and has 8 pieces (6400$

You can find a hammerhead daily in the sunken ship, get the sushi to lvl 10 and it'll have a taste of 390, enough for diamond

I got platinum rank off of lvl 9 rhinochimeridae. So yeah, shark sushi good.
The absolutely top taste ones are either recipe dishes or (deep) glacial sushis.
The tastiest is seadragon onigiri, so glacial area sea horses.

Seadragon Onigiri, when you have access to the ice area. It's a terrible dish to sell but definitely has extremely high taste.
