If you can drive more than $2k in revenue increase with 9 additional customers (36 at platinum to 45 per night at diamond), you'll make more than you'll spend in the increased operating costs. I.e., if you sell dishes worth more than $222 per serving, you'll make back your costs.

Be warned that you will need to make sure you can keep up with clearing dirty dishes in a timely manner due to the increased customers.
