I have about a hundred hours in it, and I haven't even gotten to the new 1.0 content yet, let's put it that way. It's a really fun, relaxing gameplay loop.
At the current rate I expect to do everything I want to do by about 60 hours. I don't think I'm going to go for 100% though, the tamagotchi mechanic looks like a bit of a pain to get achievements.
So far, the game is very chill, there are only a few events which are on a timer:
Sometimes a VIP visits your sushi bar and the chef wants to prepare a special meal for that occassion, so you'll have to gather the requested ingredients. You typically get two or three days for gathering.
Similar to this are special community events which celebrate certain types of seafood, dishes with these kind of fish generate more money. Again you typically get two to three days in order to prepare for the event.
Last but not least you'll get some stormy nights which might spawn certain quests and encounters. If you miss those, there is no need to worry however: You'll get another chance the next storm hits.
Besides that, you can pretty much play the game at your own pace.
You can play it inifinitely if you insist but I think there is a point where that no longer makes sense.
Anyway, the game does not do require you to hurry up or anything, so you can play it at your own pace.
just beating the story at that pace will be 35+
