How go to Night Diving?

I never see an option for night diving pop up. After I close the restaurant it continues to the next morning automatically.

First, you have to unlock the ability to night dive. When the guy in the straw hat visits the restaurant for the first time he will ask for a specific night only fish and then you can do it from now on.

Then you have to go to the boat before the restaurant opens in the evening, after your afternoon dive...and just dive.

Ok, yeah, I had the guy show up. For some reason I assumed the night dive would be after the restaurant phase. Thanks!
