Curious to see who everyone else chose as their branch Manager and why.

I chose Drae because he has overall high stats in every category.

Kyoko, mainly because she was just there. Still, I have a lot of questions on the functioning of the branch in general, like what determins the branch managers rank so they can put higher tier recipes on the menu, and whether branch staff needs to have all the abilities to run the restaurant (eg drink serving, wasabi refill etc.)

yes it was answered by the actress NPC. cooking stat on manager determines what level of foods/ingredients you can use. but overall well rounded all high skills is desirable for branch manager, hence Drae is one excellent candidate.

Drae is the best because he has the highest stats overall which means the most dishes unlocked while having much popularity (+customer count).
