Time Limits?

Do you have to finish quests right away or can you screw around for a few days collecting fish and stuff? Is there any time restraints? Sometimes I just wanna be in the blue hole doing my own thing haha

VIPS and Party events get announced 2-3 days in advance. If you fail the VIP quest it'll get pushed back. I think parties happen regardless if you've prepared or not, but they're most for extra cash.

Everything else is untimed. However, a chunk of the story quests "lock" the map to a specific configuration until you complete them.

The game will also push back the due date for parties and VIPs if the main quest forces you to miss a night, which is nice.

What about storm boss figths on party days? If you skip one storm nigth can you still do the boss?

Yes. You will get the quest again on another stormy night.

The storm quests are numbered. If you fail e.g. Storm 2, you will get Storm 2 again the next night that there is a storm. It's misleading that they say quest failed, but it comes back. I failed the storms twice because they overlapped with important events/parties, but I got all the bosses anyway.
