Report a translation problem
Each dish has a taste icon next to them and the game allows you to sort by price, taste, etc. You'll want to sort by taste and see what you top dish is right now. The dishes you unlock as you progress in the game are the ones you will want to focus on upgrading (like tuna). Additionally you may want to look for the more "complex" dishes that take several types of fish or other ingredients and upgrade those.
When you "ENHANCE" dishes, this increases two stats:
Price, with the money icon.
Taste, with the Happy Face icon.
Enhance a dish until the Happy Face/Taste stat is 250 or above.
