Depleting bar at the restaurant

At the sushi bar there is an indicator on the right side of the screen. The game either didn't explain it or I forgot, but it gradually depletes and every time it runs out Bansha stops cooking causing the guests to leave hungry.

So I far I haven't figured out how to replenish whatever the bar represents (looks like a broccoli???). Anyone knows what is the deal with that?

It's wasabi, stand in front of it and press space bar to start the QTE to refill it

Wasabi. Every dish created depletes it. It must occasionally be refilled. Go up to it, hit space bar, and press Up repeatedly. Dave is usually the best person to refill Wasabi once things start getting crazier and you pick staff that can handle the things Dave isn't very quick at.
