Is the bowl icon the servings or dishes?

As title says. With food you got the cost, the taste, and then a bowl. Is that the amount of servings itll make per one dish, or dirty dishes left behind?
For example, looking at Hawaiin Poke: Gold 265 Taste: 123 Bowl: 6.
If I put ONE on the menu, will it serve 6 people who ask for it?

Does the bowl indicate how likely they are to leave dishes behind?

It's how many servings one dish of it has.

Former. It means a single item on the menu can be sold to 6 different customers.
Also the listed price is per each customer. so in case of recipe you mentioned you will end up with 1590 gold if you sell all 6. (not counting any tip)

As a drawback, these multiple-serving recipes require more ingredients than basic sushi and even more ingredients for enhancing.
