That means i just need to stand at the Wasabi and refill it once, max twice in a night and everything goes auto
No Drink Serving, no cleaning Dishes and not serving Food myself^^
Supposedly stats can change for each playthrough, but their special abilities that unlock at lvl 3 and 7 at least remain the same.
During restaurant hours I can just sit on my butt most of the time but I make sure to clean up any dishes on the tables as customers will leave if there's dirty plates at where they sit. Billy is a good alternative to Raptor due to this, but then no one can make Cocktails once you unlock Cocktails.
I use similar, if you have drinks servers covering all bases, they typically serve quicker than you can which in turn means customers paying, leaving and a newer one coming in.
Same here, except sometimes I'll use Billy and put Raptor on procurement. He has brought back bonus items as well as other ingredients - e.g. he's dispatched to get miso, he comes back with two miso plus two bonus miso plus one mayo plus one soy. I've never seen anyone else get bonus goods on dispatch, and I was sending three or even four staff out at a time for three weeks.
Both end up with fairly high Serving skill, but the great part of it is that El Nino fills regular drinks (tea and beer) and cleans, while Raptor refills wasabi and handles cocktails. Basically, they run the night by themselves and you can do whatever part of it is fun to you... which may very well just be watching the profits roll in. :-)
Cooks: Yone and Maki
Both have very high cooking. Yone has Ingredient Prep which, if you prep dishes in advance, has a chance to give you a bonus dish or two for free.
Maki is acquired via a mission, while the others are by ads.

but my day is very slow, i spent time driving about 1 hour per run
