What's the meaning of rank and stars of the fish cards ?

I'm confused. Is any of the two related to rarity? Then what does the other value mean?

it shows you the best quality you got for that fish, to have 3 star cards you must get a 3 star catch of it

It's the quality of the catch. 1 star for small fish killed by guns, knives, bombs or rocks. 2 star for spear gun (or large fish killed however). 3 stars for traquilized or netted fish.

Higher quality means more meat. It might also mean more chance of special drops (such as fish roe/eggs, fins, teeth etc).

Lets say: A Fish weights 6 kg regardless of Stars you catch it at. But will give more meat (example 1/3/5) for the star rating at the same weight. So higher star is more inventory efficient.

That means nothing until endgame when you unlock the branch location. Your branch location can only use ingredients that match the rank of your manager. So a rank 5 manager can only use rank 5 or lower ingredients, etc.
