You should fill your weight with the best things you can find, and then find one of those blue spinny things to leave safely, or swim to the surface to climb onto the boat.
Make sure to use all the oxygen you find down there to stay alive for longer. Barrels, clams, yellow chests can have bottles too.
After each successful dive you get a dive log that tells you what you caught.
After that dive log, you get an option to pick a fish or cooking ingredient 'To Fish Tank'.

This doesn't just happen when you die. It happens after every successful dive.
It asks you to put something in the tank and gives you a selection option.
It is not a dive log.
You do get the same screen on death, but this is different.
There are no other ways to continue.
Since you're dealing with limited space back in the tank, I'd like to make sure that space is available for breeding tuna, sharks, specific recipe ingredients, etc.
Instead I have to routinely sail over there just to clear out all the smaller catches. I take it we could kill most things and not worry about it, but you get more meat for a non-kill, which is why I routinely carry tranquilizer weapons.
Just to clarify how this all works again (and for future readers too because people have a really bad habit of necroing old posts in this forum), you do not have limited space in the fish tank. The fish tank is your inventory at the restaurant. "To Fish Tank" as a button is simply a more thematic way to say "Next screen please".
All fish caught during dives goes straight to your restaurant inventory. You do not have any choice otherwise. Only roe and roe equivalents (for species which don't produce roe) go to the enclosures in the fish farm. Whether you capture or harpoon/kill a fish, you still have a (equal AFAIK) chance to acquire roe. Larger and more valuable species such as tuna and sharks have a commensurately lower chance to acquire roe.
