Something is blocking or preventing your rig from automatically install and acquire required component to run the game.
Most are from bad update of anti-virus, tweaked setting/patched or hacked OS and... so on.
Does Game Dev have some kind of user access right to access your PC and personally fix those kind of things for you, no? They can at best point out what yours problem is.
The fix is simple, either find and fix the root of the problem or skip it by just manually download and install the required component yourself. Cheers

Additional info: I am trying through a Windows 11 VM via Parallels on a Mac. I'm seeing more people that have this setup and having the il2cpp issue.
Same here I did download all the VC-redist direct from Microsoft and disabled virus scanner. No luck.
Assuming that you didn't use any junkware that break windows registry which mess up and break minor things such as this topic nor having problem with the installation of the core component.
Game is recommend to run on windows 10 64-bit. You're on Mac OS using a virtual machine, Maybe worth to try by creating another VM build of windows 10 version?
As Windows 11 itself is not quite stable depends on which build and update you're in and some third party software installed on it can break smaller things even further.
Would love to know if there is a way to play this game on the Windows 11 VM.

You can get a hand of win10 iso from many source just google it. Then install it using Boot Camp. Do check the pre-requisite first whether you meet the requirement.
