Once unlocked, how does it work, do i have to skip a restaurant phase for it?....
After unlocking i did the restaurant phase and landed straight into morning afterwards,...

It's designed for you to go night diving before you open the restaurant. If you do this it uses up 1/3 of the Evening time used for running the restaurant.

To dive at "Night" you dive first thing in the "Evening", before opening the restaurant.

Confusion may be stemming from the clock labeling the time of day as "Evening" which most in the US would consider a different time of day from "Night".

You lose 1/3 of your time to sell sushi for just that one night.
