Have you two checked out Valheim? Because after SV was "too cozy" for my bf we just went with that - he'd go slay trolls, I'd build up the camp, take care of the crops and do all the cozy stuff in the meantime.
To progress through the story, boss fights can't be avoided. But as far as I could tell the difficulty doesn't scale up in multiplayer and since you can beat Valheim alone, her letting you handle that is absolutely an option. (Same with dungeons. Even I managed to clear out a few of those by my lonesome self.)
Rune Factory, stardew was inspired by it/original Harvest Moons before it turned into nintendo conveyor and is much weaker version of them. All rune factory games have combat and dengeons, but Rune Factory Tides of Destiny have most rpg elements and quality combat similar to ys series. If pc only then rune factory 4, 5th made from ghost of the devs team and weaker then previous games, All games obviously singleplayer.
Marvelous never ever became a Nintendo conveyor, as they were the original makers of Harvest Moon, Natsume was just the publisher and had rights with the Harvest moon name just not the game itself.
Marvelous Japan decided to start using XSEED Games, their own localization studio, to handle translation and publishing duties for the games in the west, since Natsume had the Harvest Moon Name rights, XSEED went with Story Of Seasons.
Even after both had Split they both Marvelous and Natsumi brought games out on the 3DS under their respective names. Both also have games out on the switch aswell.
Both Natsume Harvest Moon' games are on Steam, Same with Marvelous RF4 and 5, 2 Story of Seasons with Rune Factory 3 and It's a wonderful life coming soon. Also Doraemon Story of Season 2 games aswell.
@DATuhh there is no combat as far as I have seen.
