How is STORY mode different?
I have zero interest in managing a hotel. If I want to manage a hotel I buy a game that is focused on hotel management and that is never going to happen.

I started a new game in story mode and it's exactly the same, how is story mode different?

Story mode does not have any management aspects to the game, aside from the need to renovate rooms for guests and the facilities guests and staff will utilize (as they would be necessary for the staff and guest progressions). There won't be any need or requirement to maintain the facilities as there would be in Normal mode. This includes, but is not limited to maintenance and housekeeping.

Staff will not have traits that would allow them to better serve the guests, nor would you be needing to obtain the various tarot cards (or other general items) to help improve staff or satisfy the guests. And in Story mode, there are a couple of scenes you will not be able to see (along with extra renders) as you would in Normal mode.

So while both modes of gameplay appear similar (as far as the storyline is concerned), there are subtle differences between the two, as I've mentioned.

Story mode is a bit boring, but no interest in running a hotel. Verdict, not a fraction as engaging as Man of the house. I thought the hotel would have had a creepier, horror vibe, instead it was just boring. I applaud the effort, but I found the game boring.

I'll explain what I mean by boring. In a normal VN you are carried along by the story and the pacing is controlled by the author, which creates tension, suspense etc. The game mechanics only serve to destroy any narrative momentum rendering the scenes siloed and lacking emotion impact. I don't consider VNs games, and this is a strange hybrid that fails to be an effective game and also fails to be a VN, into falls into a zone between the two that isn't a good vehicle for story telling.

Of course this dork jase has a problem with this game as well, I have seen 37 of your reviews you have hated on all time great games, games people put in their top 5 all time AVNs. The only time I have seen you be remotely positive is when it involved some lgbtq+ furries, every explanation you give leads me to believe you belong on the deepest depths of moderated reddit threads.

God forbid you get a game to .... play a game, and than get more on top of that. You fail to be an effective reviewer, and you also fail to be a competent individual.
