what does souls do?

I know this is a roguelite but I'm confused on the souls. what do you purchase with them?

You use souls to unlock new game modes and difficulties.
If you are playing the Soul game mode you can also spend them to get upgrades but those upgrades are only useable within that game mode
iirc you can also spend souls on the NIGHTMARE difficulty to make the game harder

In the Main menu, after you choose New Game.

Or in the Dark Room you start in when you start a run in the Soul game mode.

There is no soul game mode in the main menu for me. They seem to be useless outside of different menu options.

It's hidden to the left of the Ascent game mode option.
