That said, you get items and such that make fighting large groups much easier, which you should be using anyway when squaring against them so you don't waste time.
I would honestly just keep playing the story until you get better equipment, like actual guns and better sneaking items.
The game I think gives you way too much freedom to do side stuff too early when they don't even give you equipment to make dealing with MULEs more tolerable. Like, yeah, fighting MULEs with only your bare hands and strand-parrying is doable, but it's such a hassle compared to using the restraining gun or stun grenades.
Until the savages learn how to use guns...
You can also try a stealth approach.
Learn how to handle the strand you have as equipment. Aim it and use it to parry at the right moment. It will leave you somewhat behind an opponent. And from behind you can use the back attack to render them harmless.
Stealth is all about staying out of sight and often in the high grass.
You can also throw stuff you hold in your hands, by releasing as you attack. It's a strong attack but damages cargo. So use junk.
