It is the standard, yes. All other modes are challenges to play the map differently.

In some maps, "relaxed" is easier.
Also, the 20K challenges are normally easier

"Practice" is the easiest, but it's not everywhere,
also 10 k /20 k/ whatnumber K (it depends on the map) like pdanoe said are also easy as you can build all your necessary tower immediately.

There is not really a 'difficulty' setting, theres different modes, but not different difficulties, 'Story' is the standard game, so just choose that
