Non-binary means that the person does not belong to the binary mathematics and binary numbers way of listing results, where everything can be split into just 0s and 1s. If the Dragon Age lore doesnt have binary mathematics mentioned in its lore, its ridiculously stupid to use that term. They should have made another term for "other genders" if its important to them, not use real life modern term that has nothing to do with fantasy lore.
I'll be honest, I didn't do that much of a research, so my apologies if I've caused you to come up with the idea that I'm some kind of conspiracy theorist.

I'll also throw out that there could be an even more interesting reason to use they/them pronouns. Now, I don't think this is the case, but if it was more of an Anders/Justice situation like in DA2 where there are actually two identities to consider, it'd just make sense.
