How do we know which valuables to sell and which to keep?

You can sell all valuables, they have no other use afaik.

Sell them all. They are only used for money and rep. The only thing you have to pay attention to is the Rep. When you want to sell make sure to sell the the people you want to level rep for the first.

Also Rep doesn't count towards upgrading shops like I thought. You just need the money and normal materials to level up shops.

Oh thanks ever so much, I was confused because I thought I read somewhere that you can get skill points from some of them

There are some items you can find (also in general shops) that can provide that, but they don't end in the "valuables" tab.

I haven't heard that, but maybe I haven't come across them yet, but I do know there are wolf statue collectibles you can find that give you a skill point, but you get the point as soon as you pick it up.
