Having played the game to her point, and beyond, I can say. You actually do get a choice of what to do with her proclaiming her identity, and you do get to have a say in it, guide her towards the choice.
It's actually a well developed scene. You sit down with Taash, you speak about why she feels the way she does - how she feels that, actually, she's uncertain in her body and, going by the Qun, she's a warrior, a fighter... which doesn't match her soul.
The infamous scene where Taash declares herself 'They' is after you, Rook, get an intimate moment with Taash and help Taash come to terms with what is, effectively, an out-of-body, dysphoric experience. You ever convince her to remain as that - her - and stand strong as a qunari that breaks the norms, but, treasures them, or--
You - Rook - engage in an off-screen scenario that cuts away Taash's breasts, and encourage Taash on their path as one that proves there's more to the Qun. That it's not just men, and women, but there are those inbetween that value it just as much, but feel like outsiders due to their strict dogma
In a good twist of writing, convincing Taash to remain a woman - but a proud exception - sees you standing proudly by her, encouraging her to her full potential. If you go the non-binary route, they refuse challenges accepted on the other route - out of uncertainty, adapting - but start to stand tall. They have a unique shout ability that just disarms everyone in the vicinity - really good.
Are there any deep meaningful interactions based on my choices, or is it all a lukewarm reaction that results in mild dialogue changes as well as a few choice scenes?

You know, I was actually upset they didn't have a good character that you could play as for a fully customized origin. Perhaps you are brother to the Nightsong or somesuch. Anyway. I don't mind a good-to-the-bones hero as long as I can also play an evil-in-his-blood villain. I never played the previous DA titles, so I don't know if that was available in them anyway.
