In Santa Fe you can lie in ambush for convoys and wait till you have an angle on their back. Legion tanks have terrible turret move speed, so if you are lucky you could squeeze two rpg shots on their weaks side while they are turning.
For north put down mines with technicians
For west, have tank and bradley wait in ambush behind since the tanks go foward and dont stop, its pretty easy to hide above or bellow them and follow them around a bit to destroy them from the back. Bradley
Dont forget to check integrator tech.
Atgm also work nicely, plasma recoiless, the air strikes if you can time them
I put my bradley and all my RPG troops to the west side.
Between the starting troops and all the bonus troops you can easily take on those tanks.
C4 from rangers or guerillas 1 shots it and anything in a radius (can kill 3 with one c4) and you can rush them to the 2 locations at the start. Abrams tank with 120mm and recoilless, 2 heavies with recoilless or 2 atgms shooting from the side or rear will kill it. Atgms are the most expensive option. So use one of the others.
To destroy it without unnecessary risks put something in its way, protect it with smoke and shoot from the side with the rest.
I've found that smoke grenading them is reasonably effective if you have troops in cover. You can attract the Legion tank's attention long enough that you can sneak an AT unit of some kind behind them.
Abrams do well mostly, but only in that they either get lucky or they can approximately trade blows. You still want to avoid going head on though as every unnecessary hit from a heavy weapon can at best damage you & degrade your armour (which you obviously can't fix in mission), at worst wipe you out.
You could also try some AT mines on the known approaches if you have any teams that can lay them. That may be for later in the campaign though.
