You'll never learn how to play against him if you have that attitude.
The counter to Jason's mist is to hit him early. It doesn't hit until he actually steps through it. It takes a good second or so before it's an active hitbox, so just hit him before then. If he uses it ahead of time, just dodge backwards and attack him when he comes out of the teleport and is completely helpless.
Yeah, as someone who mains him, my nightmare is someone competent and hyper-aggressive. Jason's moves have a ton of startup and he gets hitstopped if someone just sticks to him. Without time to charge it, his pseudo-armor is useless and I end up having to use a very small set of quicker attacks or try to parry.
I've got like 30 Jason wins so far and I can tell his aerials are extremely binary. His downairs are atrocious - quite likely among the worst in the entire game. His down special is beyond useless and his down normal has a very strange, very narrow hitbox. It is also very slow.
However, his upairs are really good. His up normal is okay - it has a lingering hitbox so it's easy to land. His up special is insane, and can easily kill at around 60. The problem is closely related to what you already said: he can't really launch, nor does he want to put himself into the air deliberately.
Jason sucks as a character overall. He's vastly overrated due to his very high kill potential. His only, and I mean ONLY true combos are jab-jab-mist or jab-jab-stomp. Jab-jab-stomp-overhead is not true. Jab-jab-upair is not true either. Misstep is a terrible move due to reasons others have already stated: not only can you very easily jab him out of the initial frames, it's also super inconsistent and puts him on a frame disadvantage when leaving.
Basically he does 2 things: kill you with a single charge attack at 60, or upair you into oblivion at 60. Both feel extremely unfair to play against until you actually try the character yourself. It's really all the guy CAN do.
Down air special is one of his better moves, I feel. It's a fakeout move I use when someone is trying to edge guard or juggle. The brief midair pause is great for baiting their attack and then it leads into a double hit with massive kill potential. It's also good to mix in your ground game for short hop approaches. You don't want to spam it, but it's a great tool.
Agreed on his dair normal, though. Tiny hitbox, slow, hits to the side instead of straight below. At least it hits like a truck if you do land it. The sleeping bag is a total meme. Even if you do land it, god help you, it doesn't lead into anything.
His up attacks are great, though. Ground up has massive range above him and beats out most dair attacks. Ground up special is a niche tool but its crazy hitbox helps him combo. Both of his up airs are incredible - up normal carries really high and up special reliably kills at like 70-80.
Having switched out to other characters and playing against him, however, I know his game and he gets manhandled so easily. I kinda feel like his neutral special shouldn't be charged or he should get a free full charge one after taking around 30-50 damage. He definitely needs the armor to get a gameplan going.
