Processing on the other hand CAN increase the value, but not always. Basically any vegetable that you make into Vegetable Juice via the Fermenting Barrel is a straight up loss, though some lower value vegetables such as Dress Lettuce may make some profit in a level 3 Fermenting Barrel, as that takes 25 product and turns it into 36 juice.
Vegetable Jam via the Jam Maker is slightly better money, especially as you get the higher tier Jam Makers, but is still not great, and again, the more a vegetable sells for, the less profit you make on Vegetable Jam.
Fruits on the other hand are generally useful for consumption as Juices, healing without filling your stomach, and having other effects, but bad for selling. Fruit Jam is specifically made to sell, and is generally good money.
Then there are crops that are specifically useful for processing. Revol Pepper (I think, I get the two mixed up in my head) can be turned into Black Pepper in the Spice Maker to sell for a good profit, the same with Curry Herbs to Curry Spice. Nectarcane and Honey Flower can be made into Sugar and Syrup respectively in the Desert Maker, both at a good profit. Then there is Bellhops, which can be made into Hop Juice in the Fermenting Barrel, for a very nice profit over the crop itself.
