You process Hide (deerskin) into rawhide once you unlock the Tanner building .... once you have .... build a tanning rack or two .... much faster than doing it by yourself or by your villagers (it dries the hides over a time without your interaction)

Nah, the tanning rack is used to make leather and crude wool, what you want is the drying rack(came with weaver or close to that I think).
