It may(?) also be affected by a setting in your storage that determines that minimum 300 wood should be there, that's why you see 0 available wood at your crafting station's menu. Not entirely sure about this though.
Watch them while they're working. They'll have icon over their head to let you know what they are doing. Woodcutting tasks will have the axe icon. Harvesting tasks have the leaf. IIRC cutting the actual trees are woodcutting and picking up and taking them logs/wood to the work station are harvesting. Then from work station to storage is delivery. I'll double check when I play later.
I had like 100 feathers stuck in my hunters hut but the game still considered them as available for crafting.
No "not enough resource" warning.
