weapon damage stats
This will most likely a silly question, but I always thought that if a sword has stats like 40 blunt and 45 pierce (arbitrary numbers) it is good (85 damage), and I don't need a battleaxe with 65 pierce (again arbitrary stats). but I was watching a video and the experienced guy was using a 65 something (pierce, cut, not sure) weapon.
So my question is; when a weapon has 2 different ratings, don't we add them up? or are these ratings are individual, and applies depending on your attack? like side attacks cutting, lower attack is pierce?

It's not directly explained in game. It's easily verifiable and pretty common in gaming with varied damage types. Ie slashing = cutting, thrusting = piercing.
I made a short sword way back that has pierce and cut. I believe the pierce portion is for when you stab. Wolves, for example, if you run up on them while they howl, your character will do this stab animation, which I assume does pierce, judging by the numbers.
