After that it's just free meat, hide, etc. Hunting lodge is also the only sane way to get feathers. The NPC's can shoot the birds down like they're firing laser beams. It traces a line straight to the bird from their bows.
I also want to hunt humans, no lite-stealth is a bummer.

There's nothing to fix. You need to learn how to do it right.
Actually, if you hit one and they run off, they wont run as far as they used to. You can follow and then try shoot again. Forest/tree's act as obstacles and can make it a bit tricky sometimes though.
"Before" deer were way harder to hunt, for they were more skittish and spooky. Now you can almost step on it before it runs off you. You need practice, that is all. But I understand frustration - I did brush against it playing the game. But then I thought again, to myself, I just need to find my way around it or learn how to do it, like in life. And I did learn. But the moment you will put up first hunters hut, you will be swimming in feather and deer remains.
and since the distance that eye symbol appears is always roughly the same, you will quickly get the instinct of the correct place to aim.
Also, you can buy some hides at different traders untill you reach a skill level that allows deer hunting. Sturdy arrows also make it much eassier to get a one-shot-kill.

Yeah, I built the hunting lodge, and few days later I had 123 units of hide in my storage. And boatloads of feathers. I set deer and ravens to priority 2.
Stay hidden, approach perpendicularly, line up head shot, 1 shot kill. Yea I know. It's not fun and it's frustrating as all hell.
Its not the hunter you want a one shot aim for the head, and in those hunting games only reason headshot is bad is it ruins it as a trophy kill but you are after the PELT and meat so head shot would be the best if you can do it, you not here to mount its head on a wall.
Anyways yeah just practice actually try to aim, head shots are easiest way to hunt them and once you get the lodge its stupid easy mode to get their pelts, you literally do nothing and get piles of them. And again it use to be way harder you had to fire from a pretty good distance and become a master of the arrow drop originally to head shot them now you can get way closer to them to where the I can't do a headshot excuse is kind of sad... And in the beta its even more easy to get close..
