Workers and the Smoker/Campfire
I don't know why I didn't think of this sooner.

If you're having issues with your workers taking all the meat and mushrooms and throwing them on the smoker (or campfire) before they can be made into stews, go into your settlement buildings menu and set the smoker to priority 0. They will stop using it altogether and focus on the cauldron for stews. Use this to control things until we have smokers that allow us to set limits (if that ever happens).

Even of you have the smoker set to priority 0, you can still manually add meat/mushrooms to it and your workers WILL remove the cooked food from it automatically without refilling it. I've tested it for several hours and it seems to work perfectly.

You can use this to control how much of what gets smoked and not have to be completely hands on with the whole process. I know it's not ideal, but until the smoker can be set up like the cauldron with production limits, this is the least pain in the ass way to still use the smoker and not have your workers use every last piece of meat and mushrooms on it automatically.

For some reason my workers NEVER remove cooked food from smoker and it always overburned

I have been doing this. I have 3 cauldrons, one for berry jam, one for mushroom stew and one for fine stew. Now, if we could get them to not load them with wood, even when the cauldron is not cooking. I have one follower with cooking as priority 1, all other job priorities for him are set to 5. He tends to the cauldrons and the smoker rack. I have two chests close by. One with the raw ingredients and one for the cooked items. With a water collector close by and a water jug on his belt, holds 25 water.
