Anyone found any good ways to make gold and is there anyway you can get fish yourself outside of buying it?

Gold by killing Bandits 'n stuff, also you can trade. every day the stock is reset the trader will buy

Since merchants have a VERY RESTRICTIVE BUY POLICY you are better off just roaming around, finding a bandit patrol and decimating it....useful resources, food, lucky times a book and of course sometimes you get the shiny coins as well.

THe 2 merchants who sell straps buy varying amounts of simple cord (typically 5-15). The merchant in the 1st village tends to buy 15-25 reeds. All of three pay 10g per item. THe village merchant will also buy 1 simple axe (apparently needs to be fully repaired- tried selling a damaged one and he would not buy - but damaged ones DO count for quest turn ins).

You can sell various amounts of garlic for 10 gold to many herbalist you run into out in the woods. Even raw mushrooms for 2 gold

Keep in mind, that garlic is better used for spices to make more productive meals/combat boost meals.
