If you are early into the game then you might not have the bag yet or the stock pile.. things do stack in the stockpiles.
If your own inventory and the inventory of your villagers stacked I believe it would break the game. Early on it's rough but it gets a lot better.
Stealth and crouching.. totally agree.
Can't please anyone. Just try to realize what your thinking is a nice-to-have, may actually water the game down to, as said, a 2 hour challenge.
The devs put a lot of planning and thought into inventory, and for me, I am quite happy with what they gave us.
