If you read the build requirements carefully it states that you need an apprentice for THAT one.

Keep the camp cooking stuff going for a while longer everything is is upgradable
You can unlock the toolmaker, weaver, forager/mining/lumberjack halls, their upgraded mining pick (needed for iron mining and granite) and axe (for hardwoods) as well as a melee axe and warhammer. 1 of the cloth hut armors can be researched without a specialist (although it needs feathers - the solo birds flying around drop them [posts suggest going to cliff tops for easier spotting/killing]).
