Devs already answered this on Discord yesterday. The smaller trees do respawn the larger do not. With over 10,000 trees on the map you will not be running out any time soon. Not a MP game so only you.
Ores don't despawn, the rock they mine is permanently there, as far as I can tell. That's why sometimes it takes 10+ hits to get ore or even stone, because they don't run out. Make sure you put extra mining picks in the mining camp for them because they also break quickly, until you can set them up with a workbench and a daily strap delivery of 2-5 straps so they can repair them on their own.

I managed to despawn a Copper Ore Vein. it took like ... 30+ days i think. It would've been better if they didnt dispawn at all in my opinion! XD
