I wouldn't worry too much over having "good" apprentices. As long as you have 1 of each, you're G2G.
Peasants can get the job done just fine, and you can pick and chose which ones to recruit. Just build more village houses. You get two more to pick from.
Yes they despawn. But it takes awhile (not sure how long but it looks like maybe one in game year?). What I do is leave the rejects shirtless so that when I'm head hunting for talent around town I know to skip anybody without a shirt on lol. Unfortunately h-town is practically looking like a nudist colony at this point.
They go back to their previous village, or at least that is my experience, and the ever growing number of villagers that run around with no clothes. I usually bring low skilled companions and then hire new one and trade over their gear and leave the old one in the undies.
