Daggerfall Unity - Cannot find towns and residences
Weirdly enough, I got a quest from king in Daggerfall to seek some dude of Stokworth in such and such residence (Gold Smuggling). I am being chased by assassins like crazy everywhere I go. Guards give no ♥♥♥♥, but most importantly - Stokworth cannot be found on Daggerfall's map despite being 3days of travel from the capital. Nobody knows the guy and or his place in Daggerfall also, so it clearly needs to be somewhere. There are few other such quest with unfindable locations.

Are you using the search command or are you manually trying to find it by hovering over the dots? Stokworth does exist in Daggerfall Province[en.uesp.net], but there are a couple of other "Stok" prefixes too, so be careful.

... and check your DFU mods: Do you use one which might overwrite or hide locations?

I am playing the GOG Cut with the Dream and other mods. I would assume that one does add more UI friendly approach. I only use the 'search' function and never find anything. For instance when I look on the map, it seems like it is incomplete. In Daggerfall province there is only handful of towns along the coastline but none shown deeper mainland. So I am puzzled. Also I have played with tutorial on, perhaps that could be a culprit?

The GOG cut is very buggy and outdated please don't use it.

This. Please do not use the GOG cut, just use "vanilla" DFU (and then mod it yourself).

The GOG Cut is not more or less buggy than DFU (except that it's not built on the latest DFU version). By adding mods (not only the GOG Cut ones) you always run the risk to add problems, too (problems of individual mods, and, more so, problems different mods have with each other).
If people are aware of this risk and like the mods included in the GOG Cut - why not? I'd still recommend to follow Zsrai's suggestion to install DFU manually, and then to add the mods you like (make sure you use the most recent versions for both DFU and mods). But to tell a GOG Cut player reporting a problem not to use the GOG Cut is not really helpful, not least because it's neither proven nor self-evident that the problem has to do anything with the GOG Cut.

@Murky: You can safely assume that Stokworth exists and "should" appear on the map. If it doesn't, it's (very likely) either because you haven't found it (check spelling and/or make sure that towns are displayed on the map), or because it's not displayed because of a mod. If it's the latter, it's important to find the "culprit(s)".
What quest exactly do you have, and who gave it to you? And where did you get the information that Stokworth is 3 days away from Daggerfall?

Reinstalled all manually with 40 mods and DFU 1.0 ... all now shows correctly :)

I think you've done yourself a favour (at least that you now have the most recent versions of everything). Nevertheless, playing with mods always increases the risk that something goes wrong. And knowing the game without mods would help you to see what's game and what's mod - might be useful when you have problems (like the one you described above) or when you consider installing more mods or replacing certain mods by others.

My personal approach is to never install a mod simply because it's there, but because I have a reason to do it (like fix, improve, add, replace something), and to never install several mods at the same time (helps identifying the "culprit" when something goes wrong - which is likely to happen sooner or later).

Good choice. Knowing what all of your mods are, what they do, what dependencies they have, and how updated they are is very important!

All good practice, but I will also add - read the mod description, ideally closely. Really helps learn what little things the mod does that the name or a picture may not indicate, and will tell you install and uninstall directions and other errata as well.
