The Elder Scrolls II: Daggerfall

Is there a single mod I can apply so I don't have to download hundreds?
Is there something with all the best overhaul mods I can download once and just play? instead of downloading 100 mods by hand.

There is so many that change different aspects of the game in different ways that all contradict each other, so there isn't really a "definitive" pack of the "best" mods, because "best" is subjective. Scrolling through nexus or the DFU forums and just picking what you think you'd enjoy is the best way to go, especially because if a mod changes the rules of the game or adds a new feature, you are only going to know about that change by reading the mod page. If you download a large pack and something doesn't make sense or work, you'll have to try and figure out which mod in the pack added that feature so you can learn how it works.

That being said, some users have created their own collections to their own preferences which will install multiple mods at once, but If you use those, I recommend looking at the mods included in the pack and reading up on the changes first. What you can do if you have a Nexus Premium account (not free) and the Vortex mod manager then you can just select a Collection of mods like 'Darkerfall Unity' and it will install all the mods by itself.

If you don't have a premium account it will take longer and you have to click once for every mod - it will queue all of them though, you essentially just need to approve each download. Personally I didn't mind clicking a few times since I only had to do the setup once and plan on playing for many hours.

If you are talking about the DOS version that game doesn't have mods, it has patches and can be downloaded from UESP, there are even official patches from the devs that you can download for the DOS.

If you are talking about Daggerfall Unity, then I don't know. I only play DOS, to be honest.
