I like using this mod: Main Quest Enhanced [www.nexusmods.com]. It makes things a little more rational and interesting to play in my opinion, but the main quest isn't too bad without the mod
I have no idea, may be best to skip it for now and just grab some cool mods for your next character
I don't know if it would work for your game in which you left the starter dungeon - just try it (but backup the existing installation and savegames first - you might wish to restore it).
I'm not familiar with DFU modding, but I would imagine that MQE should work, at least as long as you haven't received the invitation to meet with Lady Brisienna (check your inventory for a letter). But I don't know what exactly triggers the letter to appear in your inventory.
The first part of the main quest is you getting a letter telling you to meet Lady Brisienna in a random location within a month. If you do that, she'll direct you further. You can ignore her and it has no real repercussions (like being unable to finish the main quest) but you are without (in-game) guidance.
Daggerfall ends up being slightly more sandbox because it has less pre-made content for you to follow, with pretty much only the main quest having a cohesive story line. I would argue they're all very similar and play the same anyway. It's definitely not more sandboxy in a good way, it's just less full of content

Not every mod adds content, but I don't think the relationship between the numbers is likely to be much different, if we count those adding "content" only (if we can agree on what "content" is).
Undoubtedly, Daggerfall (with or without Unity), Morrowind and Oblivion can be played extensively without ever touching the main quest and without mods. Everything else is probably a matter of personal experience, opinion and preferences.
