How to get the unity game engine to run on either windows 7 or linux mint? From where -and how- I should get it?
Daggerfall Unity (DFU) is a frontend for classic Daggerfall and works with all 3 installations mentioned above. You install DFU and point it to the installation folder of classic Daggerfall, that's all. More details can be found in the readme file of DFU or on the DFU home page (search this forum for details).
Mods for DFU can be found and downloaded from different sources, the main source is Nexus. But I strongly suggest to setup classic Daggerfall and DFU and familiarise yourself with it before going into the mod jungle.
By the way, there are mods available for classic Daggerfall, too. Most of them are included in DaggerfallSetup from wiwiland. For details see wiwiland or UESP.

Follow the instructions there. It is complete, kept up to date, & shows all the different methods.
The first post lets you pick which way to install it (Game Files [Recommended], steam, other methods {I.E. Gog, Daggerfall Setup, CD/Anthology}, and then you follow the instructions on there.
When you click the "Releases" link, it will bring you to a Github page. Scroll down to the bottom of the 1st post, and there will be an Assets section that looks like this:

The first 4 are the daggerfall unity builds, and you pick which one goes with your operating system. You do not need the last 2, those are for devs & modders.
Once you have the correct one downloaded, continue following the instructions.

DO NOT use GOG CUT (as in you need the base game to use the unity version), its outdated, many mods and install instruction also reminds you this
Scroll down to the Asset section and downlaod theversion for your operatign system
Install the steam version of Daggerfall
Unzip the Unity version in its own folder, start the exe and point it towards your steam game file (tells you what file its looking for)
Any mod you wanna install goes into
(whatver you named you unity folder)\DaggerfallUnity_Data\StreamingAssets
Each mod might go under a different subfolder you find there
Also make sure the mods are linux compatible
I recommend using uncanny's hit always land (or something like that), becasue missing hits have 0 feedback making you wonder if the hitboxes even exist otherwise
important notes
The game has NO autosave of any kind, new game if you die in the starter dungeon (and some enemies already hit hard for your level there) will make you restart all over again from character creation
Not using the vanilla swing system can help (it a weird hold click and swing to perform directional attack, there is an option to make it just hold to spam instead)
The game honeslty reminds me BG3 gameplay mechancis but in real time format:
-Armor increase dodge chance instead of reducing damage
-All attack have a roll to completely miss or land dependent on your agility and enemy armor rating
-Spells have save rolls, magicka doesn't really regen until you rest
-Main way to heal is to rest in a safe-ish zone
Big negative for me is reputation and quest fetching
You need to talk to NPC to tell you the vague direction of a quest within a town nad a bit of luck mark in on the map, but most just tell you to ♥♥♥♥ off where the sunlight doesn't shine even when using the right polite/normal/blunt dialogue option
Some quest can put you in an infinite loop of guard attempting to arrest you (called "mixup", those quest actually mark you as criminal to the guards) so you are forced to leave the region as they wont stop pestering you to the poitn sleepign in an inn isn't possible

There are some rather essential QoL mods mentioned I highly recommend
For a largely comprehensive mod list for classic Daggerfall I'd consult UESP. For those who are interested in gameplay-related mods, I recommend to simply download DaggerfallSetup, and then decide which of the mods included are interesting (using UESP or the information provided with DFSetup or available on the wiwiland site). As far as I have tried them, they all work with DFU. Eye of Argonia (highly recommended for classic Daggerfall) is irrelevant for DFU, but doesn't hurt when it's installed. And all or most of the new quests included in DFSetup are available as DFU mods, too (DFU Quest Pack 1 and other Quest Packs by JayH).
Got the game running on my windows 7 computer but it is such a potato that FPS and combat was intolerable. Besides win7 support will end this year so tried few things on my linux setup.
Downloaded the game with offline unity files and some preconfigured mods from GOG, sad to say, but it works like a charm after starting the actual game with proton 5.13-6. Could somebody tell me what functionalities I am missing?
Don't use the GOG cut, it's very outdated now; I think it's back at like 0.13.x, so at least three major revisions behind. That means it likely won't work with many updated mods (and the mods in it are outdated versions as well). Get the version off of the DFWorkshop and mod from there.
The GOG Cut is DFU + a selection of mods. The GOG Cut page at GOG lists the mods, for a detailed description please go to the Nexus, where you can download DFU mods directly.
