Can't be an imperial?
Are Imperials not in the game? At the race selection I kept trying to click on the Imperial Province and couldn't select Imperial.

Nope.
Imperial race was added in later games.
Orcs aren't selectable as a race, either, although they do exist in the game

I found that strange too. And khajit look like humans.

This is set so long ago in the elder scrolls lore that the imperials did not exist, and the infamous cyrodil being nothing but dense jungles and temples

No it's not. Uriel Septim VII is the current Emperor. The same one assassinated at the beginning of Oblivion.

The Kahjiti were also later explained to be an alternate species of the Kahjiti who were killed off by the cat-like people we know of in later games

No, there are multiple fur stocks of Khajiit, some are like Daggerfall's others more like the later games.

Ngl, kinda wish we had the option between the two. I like the Khajiit but tbh it'd be nice to play the more humanoid kind.

ESO isnt canon as far as I know and at this point in time theres been a quadrillion retcons

The Warp in the West is to blame. It's always the Warp in the West.

Lore inconsistency? Warp in the West. Why isn't 'X' like it was in Arena/Daggerfall? Warp in the West. Cyrodil not a jungle? Warp in the West. No rust dragons? Warp in the West.

Don't try to wrap your head around it, it'll break the logic receptors in your brain. Just nod, accept, and move along.
