Also, a lot of people are unhappy that they ported Portable version instead of FES version, but honestly, a lot of people would've been unhappy regardless of which version got ported, it was unavoidable.

FES has:
anime cutscenes
explorable world outside of the dungeons
3d models acting during in engine cutscenes
playable epilogue (with mixed reception)
P3P has:
all cutscenes in visual novel format using FES screenshots as backgrounds and minimal writing changes to compensate for the lack of 3d models in the background (there's a scene later on when a characters walks over to another characters and holds them and narration in p3p just says that they walked over to them)
alternative campaign with female protagonist, with some social links replaced, different dialogue options and some slight rewrites ("You must be happy that a new girl is coming, since you're a girl as well, you girly girl" Ok, I'm exaggerating, but some of the added/changed lines sound really tacked on xD)
more P4-like combat: skill cards, direct control over party members (og and fes made you use tactics menu and despite what some memes may say, had slightly less dumb party ai - this version uses P4's), etc but wasn't rebalanced around those changes, so it can be way easier than intended
Portable doesn't have the extra epilogue section with the final part of the story and a large area to explore and battle in from FES.
Portable lets you play as a girl, which has new social links and changes for existing ones, giving you reason to play through the game with both characters.
Everything outside of dungeons was changed to be presented in a 2D visual novel style, which has the downsides or making the game less immersive but upsides of easier navigation.
You can save at your desk in school in Portable. Yes, it's a big change.
Portable doesn't have any animated cutscenes while FES had many.
The battle system changed from FES's tactics system to resemble the one from Persona 4.
More difficulty options.
Part-time jobs.
New dialogue.
I might be missing some but that shouls be most of them.

There are other little things like "You can't roam yourself in P3P, you select areas you want to go with the map" but NPCs and any quests are pretty well shown so I find it fine. You CAN roam in the dungeon just fine. Only in the casual moments, you can't and use the map.
Both sides have their strength and weakness but I found FES harder to play while I enjoy the PSP version a lot more myself. It's up to tastes but these are the general difference with maybe a few more I don't remember. The female MC made interactions more fun to me.
FES is a game.
Portable is a visual novel.
On the topic of the VN style, first time in the school it took me forever to find the spot to go to the hallway I needed because for some reason it's literally the only place that doesn't have a marker saying something can be interacted with. Amazing design.
Backgrounds are blurry af.
Sound quality is incredible in that it's so ♥♥♥♥♥♥ up I'm impressed. It gives me sensory issues and also makes my tinnitus worse.
Music is also bugged in general. It's on a weird loop during the school day that sounds very off, and not just because of the poor quality.
The copium with regard to an actual remake in the future I really hope is true because idk if I want to just refund this game since it feels unplayable for me. I have until tomorrow to decide. Atlus have a few big game announcements set for this year so there's a possibility, I suppose.
People can make there arguments all day about the version they prefer and why but it means nothing the main issue is both should of been ported. Its not like this difference of opinion between P3 portable and FES is a new thing like I said its been going on for years.
If you buy P3 portable and enjoy it then thats great but it is good to understand where other people are coming from, those who do not like portable will be recommending new Persona players to not buy it which is about half the community.
